The Ultimate Energy-boosting Snack: #NextBiteGranolaSquares

 

Next Bite Granola Squares 7It just pains me to buy packaged granola bars for my kids’ lunches.  I do make my own granola for breakfast, and muffins and treats for them, but boy is it difficult to find healthy granola bars that are not just little packages of added sugar.

Nuts are not allowed in schools, but I came up with this recipe that serves as an after school snack, or a coffee break snack at work to keep energy up.  Nuts, dried fruit, oats and seeds are the ultimate snack combo that keeps you full and gives you that natural boost of energy to keep your brain fueled and your focus spot-on. Why? The healthy fats in the nuts are fuel for your brain (which is made mostly of fat!), the dates and honey provide the glucose to fuel your body, and the oats are a great source of B vitamins that help your body convert macronutrients into energy.

Check it out:

  • In food processor, chop up 1 cup dried, pitted dates, then transfer to a large bowl.Next Bite Granola Squares.JPG
  • Add to the food processor 1/4 walnuts and 1/4 cup whole almonds. Chop until still coarse, then add to the bowl with the dates.Next Bite Granola Squares 2
  • Add to the bowl, 1/4 C tahini or nut butter
  • 2 C rolled oats
  • 1/4 C honey or maple syrup (vegan option)
  • 1/8 C chia seeds

 

  • Mix well with a spoon or hands.  Really get in there, break apart the dates, make sure all is mixed well.
  • Pour mixture into a parchment-lined 9×9 baking tray or dish and pat down mixture firmly, and in to corners.
  • Freeze for 30mins. Remove from tray and cut into 12 small squares or rectangles.
  • Wrap individually in parchment for on-the-go snacks. Option is to keep frozen until ready to eat.

Ingredients:

  • 2 C rolled oats
  • 1 C pitted, dried dates
  • 1/4 C tahini or nut butter of choice
  • 1/4 C honey or maple syrup
  • 1/8 C chia seeds
  • 1/4 C whole, raw almonds
  • 1/4 C whole or halved walnuts
